Ingredients:
● 2 ripe bananas, mashed
● 2 cups rolled oats
● 1/4 cup cocoa powder
● 1/4 cup maple syrup
● 2 eggs
● 1 teaspoon vanilla extract
● 1 teaspoon baking powder
● 1/4 teaspoon kosher salt
● Oat milk, heated, as desired
● Sliced banana, optional, for topping
● Chopped walnuts, optional, for garnish
Directions:
1. Preheat oven to 350°F. Lightly grease 9×9-inch baking dish with cooking spray.
2. Combine bananas, eggs, maple syrup and vanilla extract in large bowl. Add oats, cocoa,
baking powder and salt and mix until combined.
3. Transfer mixture to prepared baking dish in an even layer. Bake until set and light
golden-brown, about 25 to 30 minutes. Let oatmeal cool for at least 10 minutes.
4. Slice oatmeal into nine equal squares and wrap each individually with plastic wrap. Freeze
oatmeal squares until ready to eat.
5. To reheat, unwrap oatmeal and place in microwave safe bowl. Microwave for 1 to 2
minutes or until warmed through. Top with desired amount of hot oat milk, bananas and
walnuts. Serve and enjoy.
