Blender Protein Pancakes

Serves: 2

Ingredients:

● 1 cup cottage cheese

● 1 cup egg whites

● 1 cup quick cooking oats

● 1/4 teaspoon kosher salt

Directions:

  1. Combine cottage cheese, egg whites and oats in a blender. Blend until smooth, scraping down sides as needed, about 1 minute.
  2. Preheat skillet over medium heat and coat with non stick cooking spray.
  3. Pour about 1/4 cup of batter onto skillet and cook 2 to 3 minutes, or until bubbles begin to form on surface of each pancake. Flip and cook for an additional 1 to 2 minutes or until completely set. Repeat with remaining batter.

Tip: Serve with fresh mixed berries and maple syrup.
